Ingredients
4 (6-ounce) halibut fillets (about 1-inch thick)
1/4 cup unsalted butter, melted
4 cloves garlic, minced
1/2 cup freshly grated Parmesan cheese
2 tablespoons fresh parsley, chopped
1/4 teaspoon red pepper flakes (optional)
Salt and freshly ground black pepper to taste
Lemon wedges, for serving (optional)
Instructions
Step 1: Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or foil and lightly grease.
Step 2: Pat halibut fillets very dry with paper towels. Season both sides with salt and black pepper, then place on the prepared baking sheet.
Step 3: In a small bowl, combine the melted butter, minced garlic, grated Parmesan cheese, chopped parsley, and red pepper flakes (if using). Mix until a thick paste forms.
Step 4: Evenly spread the garlic Parmesan mixture over the top of each halibut fillet, gently pressing it to adhere.
Step 5: Bake for 12-18 minutes, or until the halibut is opaque and flakes easily with a fork, and the crust is golden brown and crispy. For extra crispiness, broil for 1-2 minutes at the end, watching carefully to prevent burning.
Step 6: Remove from oven, let rest for 2-3 minutes, then serve immediately with lemon wedges, if desired.
Notes
Ensure halibut is patted very dry for the crispiest crust. For a spicier kick, add more red pepper flakes. Leftovers can be stored in an airtight container for up to 2 days.
