Ingredients
10–12 large garlic scapes, trimmed and chopped
1/2 cup walnuts or pine nuts
1/2 cup grated Parmesan cheese
1/2 cup extra virgin olive oil
1 tablespoon lemon juice
1/2 teaspoon lemon zest
1/4 teaspoon kosher salt
1/4 teaspoon black pepper
Instructions
Step 1: Trim the woody ends and the thin stringy tips off the garlic scapes, then roughly chop them into 1-inch pieces.
Step 2: Place the garlic scapes and walnuts in the bowl of a food processor.
Step 3: Pulse the scapes and nuts about 10-15 times until they are finely and evenly minced.
Step 4: Add the Parmesan cheese, lemon juice, salt, and pepper to the processor.
Step 5: With the processor running, slowly pour the olive oil through the feed tube in a steady stream until the pesto is smooth and emulsified.
Step 6: Stir in the lemon zest by hand and taste for seasoning, adding more salt or lemon if desired.
Step 7: Transfer to a glass jar and top with a thin layer of olive oil to prevent browning before sealing.
Notes
If the flavor is too sharp, you can blanch the scapes in boiling water for 30 seconds before processing to mellow the bite.
