Ingredients
1.5 lbs chicken thighs, cut into 1-inch pieces
1/2 cup cornstarch
1 egg, beaten
1/4 cup soy sauce
2 tablespoons hoisin sauce
2 tablespoons rice vinegar
2 tablespoons brown sugar
1 tablespoon ginger, minced
3 cloves garlic, minced
6–8 dried red chiles
2 cups vegetable oil for frying
Green onions and sesame seeds for garnish
Instructions
Step 1: In a medium bowl, whisk the egg and toss in the chicken pieces until well coated.
Step 2: Add the cornstarch to a large plate or bowl and dredge each piece of chicken until fully covered, shaking off any excess.
Step 3: Heat the vegetable oil in a wok or deep skillet to 350°F (175°C). Fry the chicken in batches for 4-5 minutes until golden brown and crispy.
Step 4: Drain the chicken on a wire rack and set aside while you prepare the sauce.
Step 5: In a small bowl, whisk together the soy sauce, hoisin, rice vinegar, and brown sugar to create the base for the general tsos chicken recipe sauce.
Step 6: Remove all but 1 tablespoon of oil from the wok. Sauté the garlic, ginger, and dried chiles for 1 minute until fragrant.
Step 7: Pour in the sauce mixture and bring to a simmer. Let it bubble for 2-3 minutes until it thickens into a glaze.
Step 8: Add the fried chicken back into the wok and toss quickly to coat every piece in the sauce. Serve immediately over rice.
Notes
For the crispiest results, ensure the oil is hot enough before adding the chicken. Double frying for 1 extra minute can make it even crunchier.
