4 large egg yolks
1/4 cup (30g) cornstarch

2 tablespoons (28g) unsalted butter
1 cup (240ml) heavy cream, cold

Instructions

Step 1: Warm the Milk. Gently warm 1 cup of whole milk in a small saucepan until it’s lukewarm (about 105-115°F / 40-46°C).
