Ingredients
1 pound chicken breast, cut into bite-sized chunks
2 tablespoons fresh ginger, grated
2 medium-sized carrots, sliced
2 stalks celery, sliced
3 cloves garlic, minced
6 cups chicken broth
2 cups egg noodles
2 teaspoons soy sauce
1 tablespoon olive oil
Salt, to taste
Pepper, to taste
Green onions, chopped, for garnish (optional)
Instructions
Step 1: Start by grating the fresh ginger, slicing the carrots and celery into small pieces, and mincing the garlic. Cut the chicken breast into bite-sized chunks.
Step 2: Heat the olive oil in a large pot over medium heat. Add the minced garlic, diced celery, and carrots. Sauté for about five minutes until the vegetables begin to soften.
Step 3: Add the chicken pieces to the pot and cook for five to seven minutes, stirring occasionally, until the chicken is no longer pink.
Step 4: Stir in the grated ginger and pour in the chicken broth. Bring the mixture to a boil, then reduce the heat to a simmer.
Step 5: Once the soup is boiling, add the soy sauce and egg noodles. Cook for about five to seven minutes, until the noodles are tender.
Step 6: Taste the soup and add salt and pepper as needed. If you prefer a stronger ginger flavor, you can add a bit more grated ginger at this stage.
Step 7: Ladle the soup into bowls and optionally top with chopped green onions. Serve hot and enjoy!
Notes
For best results, use fresh ginger. You can substitute chicken thighs for breasts if preferred. Feel free to add other vegetables like spinach or mushrooms for extra nutrition. If making ahead, cook noodles separately and add just before serving to prevent sogginess.
