Ingredients
2 1/2 cups all-purpose flour
1 1/2 teaspoons baking soda
2 teaspoons ground ginger
1 tablespoon freshly grated ginger
1 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon salt
1/2 cup unsalted butter, softened
1/2 cup packed dark brown sugar
1 large egg, room temperature
1 cup dark molasses (not blackstrap)
1 cup boiling water
1 cup powdered sugar (for glaze)
1 tablespoon molasses (for glaze)
1–2 tablespoons milk (for glaze)
Instructions
Step 1: Preheat your oven to 350°F (175°C) and grease a 9-inch square baking pan.
Step 2: In a medium bowl, whisk together the flour, baking soda, ground ginger, cinnamon, cloves, and salt.
Step 3: In a large bowl, cream the softened butter and brown sugar until light and fluffy, about 3 minutes.
Step 4: Beat in the egg, followed by the freshly grated ginger and 1 cup of molasses.
Step 5: Gradually add the dry ingredients to the wet mixture, alternating with the boiling water. Stir until just combined and smooth.
Step 6: Pour the batter into the prepared pan and bake for 35-45 minutes, or until a toothpick comes out clean.
Step 7: While the cake cools slightly, whisk together the powdered sugar, 1 tablespoon of molasses, and milk until a smooth glaze forms.
Step 8: Drizzle the glaze over the warm gingerbread cake with molasses glaze and let it set before slicing.
Notes
Ensure your boiling water is truly boiling to help bloom the spices effectively. For a thicker glaze, add more powdered sugar.
