Ingredients
1 tbsp olive oil
1 lb ground beef (80/20 recommended)
0.5 lb ground pork (or additional ground beef)
1 large onion, chopped
2 cloves garlic, minced
1 head green cabbage (about 2.5–3 lbs), cored and chopped
1 (28 oz) can crushed tomatoes
1 (15 oz) can tomato sauce
1 (6 oz) can tomato paste
6 cups beef broth
0.5 cup uncooked white rice (such as Minute Rice or regular white rice, rinsed)
2 tbsp brown sugar (packed)
1 tbsp apple cider vinegar (or red wine vinegar)
1 tsp dried dill
1 tsp salt (or to taste)
0.5 tsp black pepper (or to taste)
Optional: 0.25 cup chopped fresh parsley or dill for garnish
Optional: sour cream for serving
Instructions
Step 1: In a large Dutch oven or soup pot, heat the olive oil over medium-high heat. Add the ground beef and ground pork (if using) and cook, breaking it apart with a spoon, until browned. Drain any excess grease.
Step 2: Add the chopped onion to the pot with the browned meat and cook until softened, about 5-7 minutes. Stir in the minced garlic and cook for another minute until fragrant.
Step 3: Add the chopped cabbage to the pot. Stir well and cook until the cabbage begins to wilt, about 5-8 minutes.
Step 4: Stir in the crushed tomatoes, tomato sauce, tomato paste, and beef broth. Bring the mixture to a simmer.
Step 5: Add the uncooked white rice, brown sugar, apple cider vinegar, dried dill, salt, and black pepper. Stir everything together.
Step 6: Reduce the heat to low, cover the pot, and simmer for 30-40 minutes, or until the cabbage is tender and the rice is fully cooked. Stir occasionally to prevent the rice from sticking to the bottom.
Step 7: Taste the golumpki soup and adjust seasonings as needed. You might want a little more sugar for sweetness, vinegar for tang, or salt and pepper.
Step 8: Ladle the hearty golumpki soup into bowls. Garnish with fresh parsley or dill and a dollop of sour cream, if desired. Serve hot and enjoy this delicious golumpki soup!
Notes
For best results, allow the soup to sit for 10-15 minutes before serving to let the flavors meld. This soup tastes even better the next day!
