Greek Chickpea Salad with Lemon Dressing

2 (15-ounce) cans chickpeas, rinsed and drained
1 large cucumber, peeled (if desired) and diced
1 red bell pepper, seeded and diced
1/2 red onion, finely chopped (or more, to taste)
1/2 cup crumbled feta cheese (omit for vegan)
1/4 cup fresh dill, chopped
1/4 cup fresh parsley, chopped
1/4 cup extra virgin olive oil
1/4 cup fresh lemon juice (from 1–2 lemons)
1 teaspoon dried oregano
1/2 teaspoon salt, or to taste
1/4 teaspoon black pepper, or to taste

Instructions

Step 1: In a large mixing bowl, combine the rinsed and drained chickpeas, diced cucumber, diced red bell pepper, and finely chopped red onion.
Step 2: Add the crumbled feta cheese, chopped fresh dill, and chopped fresh parsley to the bowl. Set aside.
Step 3: In a small bowl or a jar with a lid, whisk together the extra virgin olive oil, fresh lemon juice, dried oregano, salt, and black pepper until well combined and emulsified. Taste and adjust seasoning as necessary.
Step 4: Pour the lemon dressing over the chickpea and vegetable mixture in the large bowl. Gently toss everything together until all ingredients are evenly coated with the dressing.
Step 5: For best flavor, cover the bowl and refrigerate the Greek Chickpea Salad with Lemon Dressing for at least 30 minutes before serving, allowing the flavors to meld. Toss again before serving.

Notes

For a vegan option, simply omit the feta cheese or use a plant-based alternative. The salad is even better if allowed to chill for 30 minutes before serving to let the flavors meld. Leftovers can be stored in an airtight container in the refrigerator for up to 3-4 days.
