Ingredients
1 cup plain full-fat Greek yogurt
1/2 cup creamy natural peanut butter
1/4 cup maple syrup (or honey)
1 teaspoon vanilla extract
1 cup granola (your favorite kind)
1/2 cup chocolate chips (optional, milk, semi-sweet, or dark)
Instructions
Step 1: Line a baking sheet with parchment paper. This will prevent sticking and make cleanup easier.
Step 2: In a large mixing bowl, combine the Greek yogurt, creamy peanut butter, maple syrup, and vanilla extract. Whisk or stir vigorously until the mixture is completely smooth and uniform.
Step 3: Gently fold in the granola and chocolate chips (if using) into the yogurt mixture. Mix until evenly distributed.
Step 4: Using a small cookie scoop (about 1.5 tablespoons) or two spoons, drop rounded spoonfuls of the mixture onto the prepared baking sheet. Leave a little space between each cluster.
Step 5: Place the baking sheet into the freezer for at least 2-3 hours, or until the clusters are completely firm.
Step 6: Once frozen solid, transfer the Greek Yogurt Peanut Granola Clusters to an airtight container or freezer bag. Store in the freezer for up to 2-3 weeks.
Notes
For best results, use full-fat Greek yogurt. If your peanut butter is very stiff, warm it gently in the microwave for 15-20 seconds before mixing. Feel free to customize with different nuts, dried fruits, or spices!
