Ingredients
1 lb fresh green beans, trimmed
2 tbsp olive oil
4 cloves garlic, minced
1/2 tsp salt
1/4 tsp black pepper
1/4 cup grated Parmesan cheese
Optional: fresh parsley, chopped, for garnish
Instructions
Step 1: Preheat your oven to 400°F (200°C).
Step 2: Wash and trim the ends of the fresh green beans. Pat them thoroughly dry with a paper towel to ensure they roast rather than steam.
Step 3: In a large bowl, combine the dried green beans, olive oil, minced garlic, salt, and black pepper. Toss well until the beans are evenly coated with the oil and seasonings.
Step 4: Spread the seasoned green beans in a single layer on a large baking sheet. Ensure not to overcrowd the pan; use a second sheet if necessary to allow for even roasting.
Step 5: Roast for 10-12 minutes, then remove the baking sheet from the oven. Sprinkle the grated Parmesan cheese evenly over the partially roasted green beans.
Step 6: Return the baking sheet to the oven and continue to roast for another 8-12 minutes, or until the green beans are tender-crisp and the Parmesan cheese is golden brown and slightly crispy.
Step 7: Remove from the oven. If desired, garnish with fresh chopped parsley before serving hot.
Notes
For best results, use fresh green beans and freshly grated Parmesan cheese. Adjust garlic and seasoning to your preference. Leftovers can be stored in an airtight container for up to 3-4 days.
