Ingredients
2 large boneless skinless chicken breasts
4 cups fresh broccoli florets
2 cups cooked brown rice or quinoa
3 tablespoons olive oil
1 tablespoon lemon juice
4 cloves garlic, minced
1/2 cup chicken broth
1/2 cup Greek yogurt or heavy cream
1/2 teaspoon salt
1/2 teaspoon black pepper
1/4 cup grated Parmesan cheese (optional)
Fresh parsley for garnish
Instructions
Step 1: Marinate the chicken by whisking together 2 tablespoons of olive oil, lemon juice, salt, and pepper in a bowl. Add the chicken and let sit for 10-15 minutes.
Step 2: Preheat your grill or grill pan to medium-high heat. Grill the chicken for 6-7 minutes per side or until the internal temperature reaches 165°F.
Step 3: While chicken is grilling, steam the broccoli florets for 3-4 minutes until bright green and tender-crisp.
Step 4: In a small saucepan, heat the remaining tablespoon of olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
Step 5: Whisk in the chicken broth and Greek yogurt. Simmer for 3-5 minutes until the sauce reduces and thickens slightly. Stir in Parmesan if using.
Step 6: Slice the grilled chicken into strips. Assemble the bowls by placing a scoop of rice at the bottom, topped with chicken and broccoli.
Step 7: Drizzle the creamy garlic sauce generously over each bowl and garnish with fresh parsley.
Notes
To make this dairy-free, use coconut cream instead of Greek yogurt. To make it low-carb, swap rice for cauliflower rice.
