4 ears of fresh sweet corn, shucked
4 tablespoons unsalted butter, softened
1 teaspoon chili powder
1/2 teaspoon smoked paprika
1/2 teaspoon salt
1 tablespoon fresh lime juice
1 teaspoon lime zest
1 tablespoon fresh cilantro, chopped (optional garnish)
1 tablespoon vegetable oil (for brushing)
Instructions
Step 1: Preheat your outdoor grill to medium-high heat (about 400°F/200°C). Clean the grates thoroughly.
Step 2: In a small bowl, combine the softened butter, chili powder, smoked paprika, salt, lime juice, and lime zest. Mix until smooth and well-combined.
Step 3: Lightly brush each ear of shucked corn with a small amount of vegetable oil to prevent sticking.
Step 4: Place the corn directly on the grill grates. Grill for 8-10 minutes, turning every 2-3 minutes, until the kernels are tender and charred in spots.
Step 5: Remove the corn from the grill and immediately slather each ear with a generous portion of the chili lime butter while the corn is still hot.
Step 6: Garnish with fresh cilantro if desired and serve immediately.
Notes
For extra heat, add a pinch of cayenne pepper to the butter. You can also use frozen corn cobs if fresh are unavailable, though the texture will be softer.
