Ingredients
2 lbs chicken wings, split into flats and drumettes
1 tablespoon baking powder
1 teaspoon kosher salt
1 teaspoon smoked paprika
1 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon black pepper
1/4 teaspoon cayenne pepper
1 teaspoon brown sugar
Instructions
Step 1: Pat the chicken wings completely dry using paper towels. This is crucial for the success of your grilled dry rub chicken wings recipe.
Step 2: In a small bowl, whisk together the baking powder, salt, smoked paprika, garlic powder, onion powder, black pepper, cayenne, and brown sugar.
Step 3: Place wings in a large bowl and sprinkle the dry rub over them. Toss thoroughly until every wing is evenly coated.
Step 4: For best results, place the wings on a wire rack over a baking sheet and refrigerate uncovered for 1-4 hours to air-dry the skin.
Step 5: Preheat your grill for two-zone cooking (medium-high heat on one side, no heat on the other).
Step 6: Place the wings on the indirect heat side, cover the grill, and cook for 30-35 minutes, flipping every 10 minutes.
Step 7: Move the wings to the direct heat side for 2-3 minutes per side until the skin is charred and crispy.
Step 8: Remove from heat and let rest for 5 minutes before serving your grilled dry rub chicken wings recipe.
Notes
Always use baking powder, not baking soda. Make sure your grill grates are clean and oiled to prevent sticking.
