4 large ripe but firm yellow peaches
1 tablespoon neutral oil (like grapeseed or melted butter)
1 pint high-quality vanilla ice cream
2 tablespoons honey (optional)
1/2 teaspoon ground cinnamon (optional)
Fresh mint leaves for garnish
Instructions
Step 1: Preheat your grill to medium-high heat (about 375-400°F) and ensure the grates are clean and lightly oiled.
Step 2: Slice the peaches in half along the seam, remove the pits, and brush the cut sides lightly with oil or melted butter.
Step 3: Place the peaches cut-side down on the hot grill grates. Grill undisturbed for 4-5 minutes until prominent grill marks appear.
Step 4: Carefully flip the peaches using tongs and grill for an additional 1-2 minutes until the fruit is slightly softened.
Step 5: Remove the peaches from the grill and place one or two halves in a bowl. Immediately top with a large scoop of vanilla ice cream, drizzle with honey if desired, and serve while hot.
Notes
Always use peaches that are firm to the touch; overripe peaches will collapse on the grill.
