Ingredients
1 large ripe pineapple
2 tablespoons unsalted butter, melted (or coconut oil for dairy-free)
2 tablespoons light brown sugar (or honey/maple syrup)
Optional: 1/2 teaspoon ground cinnamon
Optional: pinch of cayenne pepper
Optional: fresh lime juice for serving
Optional: fresh mint for garnish
Instructions
Step 1: Prepare the pineapple by carefully slicing off the top crown and bottom base. Stand the pineapple upright and, using a sharp knife, slice away the tough, spiky skin in strips, following the curve of the fruit. Remove any remaining ‘eyes’.
Step 2: Once peeled, slice the pineapple into 1/2 to 3/4-inch thick rings. Use a small cookie cutter or a paring knife to remove the tough, fibrous core from the center of each ring.
Step 3: In a small bowl, whisk together the melted butter (or coconut oil) and brown sugar (or honey/maple syrup). If using, stir in ground cinnamon or cayenne pepper.
Step 4: Preheat your grill to medium-high heat (375-400°F or 190-200°C). Clean the grill grates thoroughly with a grill brush, then carefully oil the grates with a high-smoke-point oil to prevent sticking.
Step 5: Generously brush both sides of each pineapple slice with the prepared glaze mixture. Ensure a good, even coating.
Step 6: Place the glazed pineapple slices directly onto the hot, oiled grill grates. Grill for 2-4 minutes per side, until beautiful golden-brown grill marks appear and the pineapple is slightly softened and caramelized.
Step 7: Carefully remove the grilled pineapple from the grill using tongs. Serve warm, optionally garnished with a squeeze of fresh lime juice and a sprig of fresh mint. Enjoy immediately!
Notes
For an extra smoky flavor, you can add a few wood chips (like apple or cherry) to your grill setup. Adjust grilling time based on your preferred tenderness and caramelization. This grilled pineapple recipe can also be made on a cast-iron grill pan indoors.
