Ingredients

4 (6-ounce) salmon fillets, skin on or off
2 tablespoons olive oil
Juice of 1 large lemon (about 3 tablespoons)
Zest of 1 large lemon
2 cloves garlic, minced
2 tablespoons fresh dill, chopped
2 tablespoons fresh parsley, chopped
1 tablespoon fresh chives, chopped
1/2 teaspoon salt
1/4 teaspoon black pepper
1 bunch asparagus, trimmed (optional, for grilling alongside)

Instructions

Step 1: Pat salmon fillets dry with paper towels. Season both sides with salt and pepper.
Step 2: In a small bowl, whisk together olive oil, lemon juice, lemon zest, minced garlic, chopped dill, parsley, and chives.
Step 3: Place salmon fillets in a shallow dish or resealable bag. Pour the marinade over the salmon, ensuring it’s coated. Marinate in the refrigerator for 15-30 minutes.
Step 4: Preheat grill to medium-high heat (400-450°F or 200-230°C). Clean and lightly oil the grill grates.
Step 5: If including asparagus, toss it lightly with a drizzle of olive oil, salt, and pepper.
Step 6: Place salmon fillets, skin-side down (if applicable), on the preheated grill. Close lid and grill for 6-8 minutes, or until skin is crispy and fish releases easily.
Step 7: Carefully flip salmon and grill for another 4-6 minutes, or until cooked through and flakes easily with a fork (internal temperature of 145°F / 63°C). Grill asparagus alongside salmon for about 5-7 minutes, turning occasionally, until tender-crisp.
Step 8: Transfer grilled salmon and asparagus to a plate. Let salmon rest for 5 minutes before serving. Garnish with extra fresh herbs and lemon wedges.

Notes

Ensure your grill is clean and well-oiled to prevent the salmon from sticking. Do not over-marinate the salmon as the lemon juice can start to ‘cook’ the fish. Serve immediately for best results.
