Ingredients
2 medium zucchini, sliced 1/2-inch thick
2 medium yellow squash, sliced 1/2-inch thick
1 large red bell pepper, cored and cut into 1-inch strips
1 large orange or yellow bell pepper, cored and cut into 1-inch strips
1 large red onion, cut into 1/2-inch thick wedges
1 bunch asparagus, tough ends snapped off
8 oz cremini mushrooms, stems trimmed, halved if large
1/4 cup extra virgin olive oil
1 teaspoon sea salt
1/2 teaspoon black pepper
1 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon dried oregano (or Italian seasoning)
Optional: Fresh lemon wedges for serving
Instructions
Step 1: Preheat your grill to medium-high heat (about 400-450°F / 200-230°C). Clean the grill grates thoroughly with a wire brush and lightly oil them.
Step 2: In a large mixing bowl, combine all the prepared vegetables: zucchini, yellow squash, bell peppers, red onion, asparagus, and mushrooms.
Step 3: Drizzle the olive oil over the vegetables. Add the sea salt, black pepper, garlic powder, onion powder, and dried oregano. Toss everything thoroughly with your hands until all the vegetables are evenly coated with oil and seasonings.
Step 4: Arrange the seasoned vegetables on the hot grill grates in a single layer. Avoid overcrowding the grill to ensure proper charring and even cooking. If necessary, grill in batches.
Step 5: Grill for 3-5 minutes per side for bell peppers, zucchini, squash, and asparagus, turning occasionally, until they are tender-crisp and have visible char marks. Red onion and mushrooms may take slightly longer, around 4-8 minutes per side, until softened and browned.
Step 6: Once all vegetables are cooked to your desired tenderness, remove them from the grill and transfer them to a serving platter. Serve immediately, perhaps with a squeeze of fresh lemon juice, for the best flavor. Enjoy these delicious grilled vegetable recipes!
Notes
For best results, use fresh, seasonal vegetables. Don’t overcrowd the grill to ensure good charring. Adjust cooking times based on the thickness of your vegetable cuts and your grill’s heat. A dash of balsamic glaze or fresh herbs after grilling can elevate the flavor even more.
