Ingredients
16 oz (2 blocks) cream cheese, softened
1 cup full-fat sour cream
1/2 cup mayonnaise (Duke’s or Hellmann’s recommended)
1 1/2 cups Grillo’s dill pickles, finely chopped and well-drained
1 tablespoon dried dill (or 2 tbsp fresh dill, chopped)
1 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon black pepper
Optional: Salt to taste
Instructions
Step 1: Finely chop the Grillo’s dill pickles. Place the chopped pickles in a fine-mesh sieve or wrap them in paper towels and press firmly to remove as much excess liquid as possible. This step is crucial to prevent a watery dip.
Step 2: In a large mixing bowl, combine the softened cream cheese, sour cream, and mayonnaise. Using a hand mixer or a sturdy spatula, beat the ingredients together until the mixture is completely smooth and lump-free.
Step 3: Add the chopped and well-drained Grillo’s pickles to the cream cheese mixture.
Step 4: Stir in the dried dill (or fresh dill), garlic powder, onion powder, and black pepper. Mix until all ingredients are evenly incorporated.
Step 5: Taste the dip and adjust seasonings as needed. If your pickles are not very salty, you may wish to add a small pinch of salt.
Step 6: Transfer the Grillo’s pickle dip to an airtight container. Cover and refrigerate for at least 2 hours, or preferably overnight. Chilling allows the flavors to meld and intensify.
