Ingredients
1 lb lean ground beef (85/15 recommended)
3 large Yukon Gold potatoes, diced into 1/2-inch cubes
1 medium yellow onion, diced
1 bell pepper, any color, diced
3 cloves garlic, minced
1 tsp smoked paprika
1/2 tsp garlic powder
Salt and black pepper to taste
1 tbsp olive oil (if needed)
1/2 cup shredded cheddar cheese (optional)
Fresh parsley for garnish
Instructions
Step 1: Place a large, heavy-bottomed skillet over medium-high heat. Add the ground beef and cook without stirring for 2-3 minutes to develop a brown crust.
Step 2: Break the beef into chunks and continue cooking until fully browned. Remove the beef from the skillet and set aside on a plate, leaving the rendered fat in the pan.
Step 3: Add the diced potatoes to the skillet. If the pan is dry, add one tablespoon of olive oil. Cook for 8-10 minutes, stirring occasionally, until the potatoes are golden and fork-tender.
Step 4: Add the diced onion and bell pepper to the potatoes. Sauté for 4-5 minutes until the vegetables have softened.
Step 5: Stir the minced garlic, smoked paprika, garlic powder, salt, and pepper into the vegetable mixture. Cook for 1 minute until fragrant.
Step 6: Return the browned beef to the skillet and toss everything together to combine and heat through.
Step 7: If using cheese, sprinkle it over the top and cover the skillet for 1 minute until melted. Garnish with fresh parsley and serve immediately.
Notes
For a crispier texture, ensure the potatoes are dried thoroughly after dicing before adding them to the skillet.
