One-Pan Lemon Herb Ground Chicken Skillet

1 tbsp olive oil, divided
1 lb lean ground chicken
1 medium onion, chopped
3 cloves garlic, minced
1 red bell pepper, cored and chopped
1 cup broccoli florets, chopped into bite-sized pieces
1/2 cup chicken broth (low sodium)
2 tbsp soy sauce (or tamari for gluten-free)
1 tbsp honey (or maple syrup)
1 tsp cornstarch
1/2 tsp ground ginger
1/4 tsp black pepper
2 tbsp fresh cilantro, chopped (optional, for garnish)
Lemon wedges, for serving (optional)

Instructions

Step 1: Heat 1 tablespoon of olive oil in a large skillet or pan over medium-high heat.
Step 2: Add the ground chicken to the skillet, breaking it up with a spoon. Cook, stirring occasionally, until fully browned and no longer pink (about 5-7 minutes). Drain any excess fat if necessary.
Step 3: Push the browned ground chicken to one side of the pan. Add the remaining 1 tablespoon of olive oil to the empty side, then add the chopped onion and minced garlic. Sauté for 2-3 minutes until the onion is softened and the garlic is fragrant.
Step 4: Stir the onion and garlic into the ground chicken. Add the chopped bell pepper and broccoli florets to the skillet. Cook for another 5-7 minutes, stirring occasionally, until the vegetables are tender-crisp.
Step 5: In a small bowl, whisk together the chicken broth, soy sauce, honey, cornstarch, ground ginger, and black pepper until the cornstarch is fully dissolved.
Step 6: Pour the sauce mixture over the ground chicken and vegetables in the skillet. Stir well to coat everything evenly.
Step 7: Bring the sauce to a gentle simmer and cook for 2-3 minutes, stirring constantly, until the sauce thickens and coats the ground chicken and vegetables.
Step 8: Remove the skillet from the heat. Stir in the freshly chopped cilantro, if using. Taste and adjust seasonings as needed.
Step 9: Serve the ground chicken skillet immediately, optionally with lemon wedges and over a bed of rice or quinoa.

Notes

Feel free to customize the vegetables based on what you have in your fridge. Spinach, mushrooms, or zucchini would also be delicious additions. For a spicier kick, add a pinch of red pepper flakes with the garlic and onion.
