Ingredients
1 lb ground turkey (93% lean)
1 small head green cabbage, shredded (about 6 cups)
2 tablespoons olive oil
1 medium yellow onion, diced
3 cloves garlic, minced
1 tablespoon fresh ginger, grated
1/4 cup low-sodium soy sauce
1 tablespoon toasted sesame oil
1 tablespoon sriracha (optional)
2 green onions, sliced
1 tablespoon sesame seeds
Instructions
Step 1: Heat the olive oil in a large skillet over medium-high heat. Add the diced onion and cook for 3-4 minutes until softened and translucent.
Step 2: Add the ground turkey to the skillet. Break it apart with a wooden spoon and cook until browned and no longer pink, about 5-7 minutes. Ensure you get some crispy bits on the turkey for extra flavor in your ground turkey and cabbage skillet.
Step 3: Stir in the minced garlic and grated ginger. Cook for another 60 seconds until fragrant, being careful not to let the garlic burn.
Step 4: Add the shredded cabbage to the pan. It will look like a lot, but it will wilt down significantly. Stir to combine with the turkey and aromatics.
Step 5: Pour the soy sauce and toasted sesame oil over the mixture. Continue cooking for 5-8 minutes, stirring occasionally, until the cabbage is tender but still has a slight bite.
Step 6: Remove from heat and stir in the sriracha if using. Garnish your ground turkey and cabbage skillet with sliced green onions and sesame seeds before serving.
Notes
For a bit of crunch, you can add shredded carrots or sliced water chestnuts. If you prefer a sweeter sauce, add a teaspoon of honey or maple syrup.
