Ingredients
1 lb ground turkey (93% lean)
2 medium zucchinis, sliced into half-moons
1 small yellow onion, diced
3 cloves garlic, minced
1 tablespoon olive oil
1 teaspoon Italian seasoning
1/2 teaspoon smoked paprika
Salt and black pepper to taste
1/4 cup shredded Parmesan cheese (optional)
Fresh parsley for garnish
Instructions
Step 1: Heat the olive oil in a large skillet over medium-high heat until shimmering.
Step 2: Add the ground turkey to the skillet and cook, breaking it up with a wooden spoon, until it is no longer pink and is slightly browned.
Step 3: Add the diced onion to the skillet and sauté for 3-4 minutes until the onion is translucent and fragrant.
Step 4: Stir in the minced garlic, Italian seasoning, and smoked paprika. Cook for 1 minute until the spices are aromatic.
Step 5: Add the sliced zucchini to the pan. Sauté for 5-7 minutes, stirring occasionally, until the zucchini is tender but still has a slight bite.
Step 6: Season with salt and pepper to taste. Remove from heat and sprinkle with Parmesan cheese and fresh parsley before serving.
Notes
To avoid a soggy skillet, do not salt the zucchini until the very end of the cooking process.
