Ingredients
1 lb lean ground turkey (93% lean)
2 cups cooked jasmine rice
1 red bell pepper, diced
1 cup shredded carrots
2 cloves garlic, minced
1 tbsp fresh ginger, grated
3 tbsp soy sauce or liquid aminos
1 tbsp sesame oil
1 tbsp honey or maple syrup
2 green onions, sliced
1 tsp sesame seeds for garnish
Instructions
Step 1: Cook the jasmine rice according to the package instructions and keep it warm while you prepare the rest of the ground turkey bowl.
Step 2: Heat a large skillet over medium-high heat with a drizzle of oil. Add the ground turkey and cook until browned, breaking it up with a spoon as it cooks.
Step 3: Add the diced bell peppers and shredded carrots to the skillet. Sauté for 3-4 minutes until the vegetables start to soften but remain vibrant.
Step 4: Stir in the minced garlic and grated ginger. Cook for another 1 minute until fragrant, ensuring the aromatics don’t burn.
Step 5: In a small bowl, whisk together the soy sauce, sesame oil, and honey. Pour this sauce over the ground turkey bowl mixture and toss to coat everything evenly.
Step 6: Let the mixture simmer for 2 minutes until the sauce thickens slightly. Remove from heat.
Step 7: Assemble the ground turkey bowl by placing a portion of rice in a bowl and topping it with the turkey and vegetable mixture. Garnish with green onions and sesame seeds.
Notes
To make this a low-carb ground turkey bowl, substitute the rice with cauliflower rice or zucchini noodles.
