Ingredients
1 lb 93% lean ground turkey
2 large sweet potatoes, peeled and diced into 1/2 inch cubes
1 large onion, diced
2 bell peppers (any color), chopped
3 cloves garlic, minced
1 tablespoon olive oil
1 teaspoon smoked paprika
1/2 teaspoon cumin
1/2 teaspoon chili powder
Salt and pepper to taste
Fresh cilantro for garnish
Instructions
Step 1: Heat olive oil in a large skillet over medium-high heat.
Step 2: Add the ground turkey to the skillet. Cook without stirring for 3 minutes to brown, then break it apart and cook until no longer pink.
Step 3: Remove the turkey from the skillet and set aside on a plate.
Step 4: In the same skillet, add the diced sweet potatoes and a tablespoon of water. Cover and cook for 5-7 minutes until tender.
Step 5: Remove the lid and add the onions and bell peppers. Sauté for another 5 minutes until the vegetables are softened.
Step 6: Stir in the garlic, smoked paprika, cumin, chili powder, salt, and pepper. Cook for 1 minute until fragrant.
Step 7: Add the cooked turkey back into the skillet. Toss everything together and cook for 2-3 minutes to allow flavors to meld.
Step 8: Garnish with fresh cilantro and serve warm.
Notes
To save time, you can use frozen diced sweet potatoes. Ensure the turkey is browned well for maximum flavor.
