Ingredients
1 lb lean ground turkey
3 medium Yukon Gold potatoes, diced into 1/2-inch cubes
1 yellow onion, finely diced
2 cloves garlic, minced
1 red bell pepper, diced
1 tsp smoked paprika
1/2 tsp dried thyme
1/2 cup low-sodium chicken broth
2 tbsp olive oil
Salt and pepper to taste
Fresh parsley for garnish
Instructions
Step 1: Heat olive oil in a large skillet over medium-high heat and add the diced potatoes.
Step 2: Cook the potatoes for 8-10 minutes, stirring occasionally, until they start to soften and turn golden brown.
Step 3: Add the ground turkey to the center of the pan, breaking it up with a wooden spoon.
Step 4: Stir in the diced onions, garlic, and bell peppers, and continue cooking until the turkey is browned and onions are translucent.
Step 5: Season with smoked paprika, thyme, salt, and pepper, then pour in the chicken broth to deglaze the pan.
Step 6: Cover and simmer for 5 minutes or until the potatoes are completely tender and the liquid has mostly evaporated.
Step 7: Garnish with fresh parsley and serve hot.
Notes
Ensure potatoes are cut into uniform sizes for even cooking. For extra crispiness, cook the potatoes in a separate batch before combining with the turkey.
