Golden-brown Hasselback Sweet Potatoes with Herb Butter garnished with fresh parsley.

Hasselback Sweet Potatoes with Herb Butter

These Hasselback Sweet Potatoes with Herb Butter are a stunning and delicious side dish featuring thinly sliced sweet potatoes brushed with a fragrant herb-infused butter, baked until tender and caramelized. A perfect blend of sweet and savory.

  • Total Time: 1 hour 10 minutes
  • Yield: 6 servings 1x

Ingredients

Scale

6 medium sweet potatoes (about 2–2.5 lbs total)
1/2 cup unsalted butter, melted
2 tbsp fresh rosemary, minced
1 tbsp fresh thyme, minced
1 tsp garlic powder
1/2 tsp salt
1/4 tsp black pepper
2 tbsp fresh parsley, chopped (for garnish)

Instructions

Step 1: Preheat your oven to 400°F (200°C). Line a baking dish or sheet with parchment paper.
Step 2: Wash the sweet potatoes thoroughly. You can peel them if desired, but leaving the skin on adds nutrients and texture.
Step 3: Place one sweet potato between two wooden spoon handles or chopsticks. Using a sharp knife, make even, thin slices (about 1/8 to 1/4 inch apart) along the length of the sweet potato, stopping when your knife hits the wooden spoons. This prevents you from slicing all the way through. Repeat for all sweet potatoes.
Step 4: In a small microwave-safe bowl, melt the unsalted butter. Add the minced fresh rosemary, fresh thyme, garlic powder, salt, and black pepper. Stir well to combine.
Step 5: Carefully place the sliced sweet potatoes into your prepared baking dish. Brush them generously with about half of the herb butter, making sure to get some butter into the crevices of the Hasselback Sweet Potatoes with Herb Butter.
Step 6: Bake for 30 minutes.
Step 7: Remove from the oven and carefully fan out the slices a little if they haven’t separated naturally. Brush with the remaining herb butter, ensuring it penetrates all the slices of these beautiful Hasselback Sweet Potatoes with Herb Butter.
Step 8: Return to the oven and bake for another 20-30 minutes, or until the sweet potatoes are fork-tender and slightly caramelized at the edges. Cooking time will vary based on the size of your sweet potatoes.
Step 9: Once cooked, remove the Hasselback Sweet Potatoes with Herb Butter from the oven. Garnish with fresh parsley before serving. Enjoy your delicious Hasselback Sweet Potatoes with Herb Butter!

Notes

For perfectly even slices, use the wooden spoon trick! If you don’t have fresh herbs, use 1 tsp dried rosemary and 1/2 tsp dried thyme, but fresh is highly recommended for the best flavor. Leftover Hasselback Sweet Potatoes with Herb Butter can be stored in an airtight container in the refrigerator for up to 3 days and reheated gently in the oven or microwave.
