Ingredients
2 tbsp olive oil
1 large yellow onion, chopped
4 cloves garlic, minced
2-inch piece fresh ginger, grated (about 2 tbsp)
1.5-inch piece fresh turmeric, grated (about 1.5 tbsp)
1.5 lbs boneless, skinless chicken thighs (or bone-in, skin-on for richer broth)
8 cups low-sodium chicken broth
2 bay leaves
1 tsp salt, or to taste
1/2 tsp black pepper, or to taste
2 cups fresh spinach or chopped kale
Juice of 1 lemon (about 2 tbsp)
1/4 cup fresh cilantro or parsley, chopped, for garnish
Instructions
Step 1: Heat olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion and cook until softened, about 5-7 minutes. Add the minced garlic, grated fresh ginger, and grated fresh turmeric. Sauté for another 2-3 minutes until fragrant, being careful not to burn the garlic.
Step 2: Add the chicken pieces to the pot and sear for a few minutes on each side until lightly browned. This step helps to lock in flavor and adds depth to the soup.
Step 3: Pour in the chicken broth, ensuring the chicken is mostly submerged. Add the bay leaves, salt, and black pepper. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 30-35 minutes, or until the chicken is cooked through and easily shreds from the bone.
Step 4: Carefully remove the cooked chicken pieces from the pot and set aside to cool slightly. Discard the bay leaves. Once the chicken is cool enough to handle, shred the meat from the bones and discard the bones and skin (if using bone-in, skin-on pieces). Return the shredded chicken to the pot of broth.
Step 5: Stir in the fresh spinach or kale, allowing it to wilt in the hot soup for 2-3 minutes. Add the fresh lemon juice and fresh cilantro or parsley. Taste and adjust seasonings as needed, adding more salt, pepper, or lemon juice to your preference.
Notes
For best results, use fresh, high-quality ingredients. This soup tastes even better the next day, as the flavors meld. Store in an airtight container in the refrigerator for up to 3-4 days.
