Ingredients
2 ripe large bananas, mashed
2 cups old-fashioned rolled oats (gluten-free if desired)
1/4 cup chia seeds (optional, for extra nutrition)
1 tsp baking powder
1/2 tsp ground cinnamon
1/4 tsp salt
1.5 cups milk (dairy or non-dairy like almond or soy)
1/4 cup maple syrup or honey (adjust to taste, or omit if bananas are very ripe)
1 large egg (or flax egg for vegan)
1 tsp vanilla extract
1/4 cup chopped walnuts or pecans (optional)
2 tbsp chocolate chips (dark chocolate recommended, optional)
Instructions
Step 1: Preheat your oven to 375°F (190°C) and lightly grease an 8×8 inch (20×20 cm) baking dish. This ensures your baked banana and oat delight won’t stick.
Step 2: In a large bowl, combine the mashed bananas, milk, maple syrup (or honey), egg (or flax egg), and vanilla extract. Whisk until well combined. This wet mixture forms the base for our healthy banana recipes.
Step 3: In a separate bowl, whisk together the rolled oats, chia seeds (if using), baking powder, cinnamon, and salt. Make sure all dry ingredients are evenly distributed.
Step 4: Pour the wet ingredients into the dry ingredients. Mix well with a spoon or spatula until everything is just combined. Be careful not to overmix.
Step 5: Gently fold in the chopped nuts and chocolate chips, if you are using them. This adds delightful texture and bursts of flavor to your healthy banana recipes.
Step 6: Pour the mixture evenly into the prepared baking dish. You can sprinkle a few extra nuts or chocolate chips on top for an appealing finish.
Step 7: Bake for 30-35 minutes, or until the top is golden brown and the center is set. A toothpick inserted into the center should come out mostly clean. Allow it to cool slightly before serving.
Step 8: Serve warm with a dollop of yogurt, a drizzle of extra maple syrup, or fresh berries. This is one of those versatile banana recipes healthy for any time of day!
Notes
For a vegan version, use a flax egg (1 tbsp ground flaxseed + 3 tbsp water, let sit for 5 minutes) instead of a regular egg, and ensure your milk and maple syrup are plant-based. For gluten-free, use certified gluten-free oats. This dish tastes great warm or cold. Store leftovers in an airtight container in the refrigerator for up to 4-5 days. Reheat gently in the microwave or oven.
