Ingredients
2 cups rolled oats
1 tsp baking powder
1 tsp ground cinnamon
1/4 tsp sea salt
1/2 cup maple syrup
2 cups unsweetened almond milk
1 large egg
1 tsp vanilla extract
1 1/2 cups fresh or frozen blueberries
1/4 cup chopped walnuts (optional)
Instructions
Step 1: Preheat your oven to 375°F (190°C) and lightly grease an 8×8-inch baking dish.
Step 2: In a medium bowl, mix together the rolled oats, baking powder, cinnamon, and salt.
Step 3: In another bowl, whisk the almond milk, maple syrup, egg, and vanilla extract until well combined.
Step 4: Spread the dry oat mixture evenly across the bottom of the prepared baking dish.
Step 5: Scatter the blueberries (and walnuts, if using) over the top of the oats.
Step 6: Carefully pour the liquid mixture over the oats and berries. Give the dish a gentle shake to ensure the liquid settles.
Step 7: Bake for 35 to 40 minutes, or until the top is golden brown and the oats have absorbed the liquid.
Step 8: Remove from the oven and let cool for 10 minutes before slicing and serving.
Notes
You can substitute the egg with a flax egg for a vegan version.
