Ingredients
1 cup almond flour (blanched, super-fine)
1/2 cup oat flour (gluten-free if preferred)
1/4 teaspoon sea salt
1/2 cup creamy almond butter (or cashew butter)
1/4 cup pure maple syrup
2–4 tablespoons unsweetened almond milk (adjust for consistency)
1 teaspoon vanilla extract
1/2 cup dark chocolate chips or chunks
Instructions
Step 1: In a medium bowl, whisk together the almond flour, oat flour, and sea salt until well combined and lump-free.
Step 2: In a separate small bowl, combine the almond butter, maple syrup, 2 tablespoons of almond milk, and vanilla extract. Whisk until smooth and creamy.
Step 3: Pour the wet ingredients into the dry ingredients. Mix with a spatula until a thick, cohesive dough forms. If the dough seems too dry or crumbly, add the remaining almond milk, one tablespoon at a time, until the desired consistency is reached.
Step 4: Fold in the dark chocolate chips or chunks until evenly distributed throughout the healthy cookie dough.
Step 5: Enjoy immediately with a spoon or roll into small, bite-sized balls. Store any leftovers in an airtight container in the refrigerator for up to 5-7 days. It can also be frozen for up to 1 month.
Notes
For best results, use blanched super-fine almond flour and natural, creamy nut butter. Adjust almond milk quantity to achieve your preferred dough consistency. This healthy cookie dough recipe is naturally vegan and gluten-free (if using certified gluten-free oat flour).
