¾ cup whole wheat flour (or almond flour for gluten-free)
½ teaspoon baking soda
¼ teaspoon salt
½ cup unsweetened almond butter (or peanut butter)
½ cup pure maple syrup (or honey)
¼ cup unsweetened applesauce
1 teaspoon vanilla extract
½ cup mixed fresh berries (chopped strawberries, blueberries, raspberries)
Optional: ¼ cup chopped walnuts or dark chocolate chips

Instructions

Step 1: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
Step 2: In a large bowl, whisk together the rolled oats, whole wheat flour (or almond flour), baking soda, and salt. Set aside.
Step 3: In a separate medium bowl, whisk together the almond butter, maple syrup, applesauce, and vanilla extract until smooth and well combined.
Step 4: Pour the wet ingredients into the dry ingredients and mix with a spatula until just combined. Be careful not to overmix.
Step 5: Gently fold in the fresh berries and any optional add-ins like walnuts or dark chocolate chips.
Step 6: Drop rounded tablespoons of dough onto the prepared baking sheet, leaving about 2 inches between each cookie. Slightly flatten each cookie with the back of a spoon.
Step 7: Bake for 10-12 minutes, or until the edges are lightly golden and the centers are set.
Step 8: Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

For a slightly crispier cookie, bake for an additional 2-3 minutes. Store in an airtight container at room temperature for up to 5 days, or freeze for longer storage.
