Ingredients
2 cups ripe mango, cubed
1 cup fresh strawberries or raspberries
1/2 cup coconut water
1 tablespoon honey or agave nectar (optional)
1 teaspoon lime juice
Instructions
Step 1: Prepare the mango layer by placing the cubed mango, lime juice, and half of the coconut water into a high-speed blender. Blend until completely smooth.
Step 2: Pour the mango puree into a small bowl and set aside. Rinse the blender to prepare for the next layer of our healthy popsicle recipes.
Step 3: Place the strawberries and the remaining coconut water (plus honey, if using) into the blender. Pulse until smooth but still maintaining some small bits of fruit texture.
Step 4: Using your popsicle molds, alternate pouring the mango and strawberry mixtures into each slot until they are about 3/4 full. This layering is the hallmark of great healthy popsicle recipes.
Step 5: Use a thin skewer or a knife to gently swirl the layers together to create a marble effect, then insert the popsicle sticks according to your mold’s instructions.
Step 6: Freeze the healthy popsicle recipes for at least 6 hours, or ideally overnight, until they are completely solid and ready to be enjoyed.
Notes
If the popsicles are stuck in the mold, dip the bottom of the mold in warm water for 15 seconds to release.
