Ingredients
2 cups mixed berries (fresh or frozen, e.g., strawberries, blueberries, raspberries)
1 cup plain Greek yogurt (full-fat for creamier results)
2–4 tablespoons maple syrup (adjust to taste, depending on berry sweetness)
1/2 teaspoon vanilla extract
Pinch of salt
Instructions
Step 1: Combine mixed berries, plain Greek yogurt, maple syrup, vanilla extract, and a pinch of salt in a high-speed blender.
Step 2: Blend until the mixture is completely smooth and creamy. Taste and adjust sweetness as needed. If you prefer a seedless popsicle, you can strain the mixture through a fine-mesh sieve.
Step 3: Carefully pour the berry yogurt mixture into your popsicle molds, leaving about 1/4 inch of space at the top to allow for expansion during freezing. For a visual swirl, you can add a small amount of plain yogurt to the mold first, then the berry mixture, and gently swirl with a skewer.
Step 4: Insert popsicle sticks into the center of each mold. If your molds don’t have built-in stick holders, cover the tops with foil and poke the sticks through to keep them upright.
Step 5: Place the filled molds in the freezer on a level surface. Freeze for at least 4 hours, or preferably overnight, until the popsicles are completely solid.
Step 6: To remove the frozen popsicles, briefly run the molds under warm water for 15-30 seconds, then gently pull on the stick to release. Enjoy your homemade healthy popsicle recipes immediately!
Notes
For best results, use ripe, flavorful berries. Adjust maple syrup to your preferred sweetness. These healthy popsicle recipes can be stored in an airtight container in the freezer for up to 2-3 weeks. For dairy-free, use full-fat coconut cream or a plant-based yogurt alternative.
