Ingredients
2 (6 oz) salmon fillets, skin on or off
1 lb fresh asparagus, woody ends trimmed
2 tbsp olive oil, divided
1 tsp garlic powder
1/2 tsp onion powder
1/2 tsp dried dill
1/4 tsp black pepper
1/2 tsp sea salt (or to taste)
1 lemon, thinly sliced, plus extra for serving
Fresh dill, chopped, for garnish (optional)
Instructions
Step 1: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
Step 2: Pat the salmon fillets dry with a paper towel. In a small bowl, combine garlic powder, onion powder, dried dill, black pepper, and salt.
Step 3: Place salmon fillets on the prepared baking sheet. Drizzle with 1 tablespoon of olive oil and rub the herb mixture evenly over the top of each fillet.
Step 4: In a separate bowl, toss the trimmed asparagus with the remaining 1 tablespoon of olive oil, a pinch of salt, and pepper.
Step 5: Arrange the asparagus around the salmon fillets on the baking sheet. Place lemon slices over and around the salmon and asparagus.
Step 6: Bake for 15-18 minutes, or until the salmon is cooked through and flakes easily with a fork, and the asparagus is tender-crisp.
Step 7: Remove from the oven. Garnish with fresh chopped dill and an extra squeeze of fresh lemon juice, if desired. Serve immediately.
Notes
For extra flavor, consider marinating the salmon for 15-20 minutes in the olive oil and herb mixture before baking. Adjust cooking time based on the thickness of your salmon fillets.
