Ingredients
1 lb Chicken breast, cut into 1-inch cubes
1 cup Pre-cooked quinoa or frozen cauliflower rice
1/4 cup Buffalo hot sauce
1/2 cup Non-fat Greek yogurt
1/2 tsp Garlic powder
1/2 tsp Onion powder
1/4 cup Shredded mozzarella cheese
2 tbsp Sliced green onions (for garnish)
Instructions
Step 1: Lightly grease a 6×6 inch air-fryer-safe baking dish or a small foil pan.
Step 2: Spread the pre-cooked quinoa or cauliflower rice evenly across the bottom of the dish.
Step 3: In a small bowl, whisk together the Greek yogurt, buffalo sauce, garlic powder, and onion powder.
Step 4: Add the cubed chicken to the bowl and toss until thoroughly coated in the sauce.
Step 5: Dump the chicken mixture over the grains in the baking dish and spread it into an even layer.
Step 6: Place the dish into the air fryer basket and cook at 375°F (190°C) for 15 minutes.
Step 7: Carefully remove the basket, stir the mixture, and sprinkle the shredded mozzarella cheese over the top.
Step 8: Return to the air fryer for another 5 minutes, or until the chicken is cooked through (165°F) and the cheese is bubbly and brown.
Step 9: Garnish with green onions and serve immediately.
Notes
Ensure you use pre-cooked grains; dry rice will not cook properly in the air fryer using this method.
