Ingredients
1/2 cup all-purpose flour (or whole wheat/oat flour)
1 scoop (approx. 25g) vanilla or unflavored protein powder
1 teaspoon baking powder
Pinch of salt
1/2 cup milk (dairy or non-dairy)
1 large egg
1/2 teaspoon vanilla extract (optional)
Cooking spray or butter for the pan
Optional toppings: Greek yogurt, fresh berries, sliced banana, nuts, seeds, granola, maple syrup, honey, nut butter
Instructions
Step 1: In a large bowl, whisk together the flour, protein powder, baking powder, and salt. If using, add any optional spices like cinnamon.
Step 2: In a separate medium bowl, whisk together the milk, egg, and vanilla extract (if using) until well combined.
Step 3: Pour the wet ingredients into the dry ingredients. Mix gently with a whisk or spatula until just combined. A few lumps are fine; avoid overmixing. Let the batter rest for 5-10 minutes if you have time.
Step 4: Heat a non-stick pan or griddle over medium heat. Lightly grease with cooking spray or a small amount of butter.
Step 5: Pour small dollops (about 1.5-2 tablespoons each) of batter onto the hot pan to create mini pancakes. Cook for 2-3 minutes per side, or until golden brown and cooked through.
Step 6: Remove the mini pancakes from the pan and repeat with the remaining batter. Once all are cooked, you can leave them whole or chop them into smaller, bite-sized pieces for easier eating in a bowl.
Step 7: Transfer the mini pancakes to a serving bowl. Top with your favorite additions such as Greek yogurt, fresh fruit, nuts, seeds, granola, and a drizzle of maple syrup or honey. Serve immediately and enjoy your delicious high protein pancake bowl!
Notes
For an even fluffier texture, let the batter rest for 5-10 minutes after mixing. This allows the baking powder to fully activate. Adjust the milk quantity slightly if using different types of protein powder, as some absorb more liquid than others. Don’t overmix the batter!
