Instructions
Step 1: Preheat your oven to 375°F (190°C) and line two large baking sheets with parchment paper for easy cleanup.
Step 2: Using a sharp knife or kitchen shears, cut each pita round into 8 equal triangles (like a pizza). If you prefer thinner chips, split the pita pockets in half before cutting into triangles.
Step 3: In a large mixing bowl, whisk together the extra virgin olive oil, sea salt, garlic powder, dried oregano, and black pepper.
Step 4: Add the pita triangles to the bowl and toss thoroughly with your hands or a spatula until every piece of homemade baked pita chips is evenly coated with the oil and spices.
Step 5: Spread the pita pieces in a single layer on the prepared baking sheets, ensuring they do not overlap.
Step 6: Bake for 10-12 minutes, flipping the chips halfway through, until they are golden brown and crispy. Keep a close eye on them as they can go from golden to burnt very quickly.
Step 7: Remove from the oven and let the homemade baked pita chips cool completely on the baking sheet to reach maximum crispness.

Store the homemade baked pita chips in an airtight container at room temperature. For best results, use pita bread that is a day or two old.
