12 oz fresh or frozen cranberries
1 large orange (zested and juiced)
1 cup granulated sugar
1 cup brown sugar (packed)
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
½ teaspoon vanilla extract
1 tablespoon lemon juice
½ cup water

Instructions

Step 1: Prepare the Ingredients: Rinse the cranberries under cold water and remove any stems or damaged berries. Zest and juice the orange, setting both aside.
Step 2: Combine Ingredients: In a large saucepan, combine the cranberries, orange zest, orange juice, granulated sugar, brown sugar, cinnamon, nutmeg, vanilla extract, lemon juice, and water.
Step 3: Cook the Jam: Place the saucepan over medium heat and bring the mixture to a boil. Stir occasionally until the cranberries begin to pop and break down, about 10-15 minutes. Reduce the heat to low and let it simmer for an additional 10-15 minutes, stirring frequently, until the jam thickens to your desired consistency.
Step 4: Check Consistency: To test the consistency, place a small spoonful of the jam on a plate and let it cool for a minute. Run your finger through the jam; if it holds its shape, it’s ready. If not, continue to simmer for a few more minutes.
Step 5: Cool and Store: Once thickened, remove the jam from heat and let it cool slightly. Pour the jam into sterilized jars while still warm, leaving about ¼ inch of headspace at the top. Seal the jars with lids and allow them to cool completely at room temperature.
Step 6: Refrigerate or Process: If you plan to use the jam within a few weeks, store it in the refrigerator. For longer storage, process the jars in a boiling water bath for 10 minutes to seal them properly.

Notes

Feel free to experiment with additional spices like a pinch of ginger or allspice. For a chunkier jam, mash the cranberries less during cooking. Always ensure jars are properly sterilized for best preservation.
