Ingredients
4 cups old-fashioned rolled oats
1 cup raw almonds, roughly chopped
1/2 cup shredded unsweetened coconut
1/2 cup pure maple syrup (or honey)
1/4 cup coconut oil, melted
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1/2 cup dried cranberries or raisins (optional, added after baking)
Instructions
Step 1: Preheat your oven to 300°F (150°C) and line a large baking sheet with parchment paper or a silicone baking mat.
Step 2: In a large mixing bowl, combine the rolled oats, chopped almonds, shredded coconut, cinnamon, and salt. Stir well to ensure everything is evenly distributed.
Step 3: In a separate small bowl, whisk together the melted coconut oil, maple syrup (or honey), and vanilla extract until fully combined.
Step 4: Pour the wet ingredients over the dry ingredients in the large mixing bowl. Stir thoroughly with a spatula or wooden spoon until all the oats and nuts are evenly coated. This is crucial for flavor and clumping.
Step 5: Spread the granola mixture evenly in a single layer on the prepared baking sheet. Try not to overcrowd the pan; use two sheets if necessary for a larger batch.
Step 6: Bake for 30-40 minutes, stirring gently every 15 minutes to promote even browning. Keep a close eye on it during the last 10 minutes, as granola can burn quickly. The granola is done when it’s golden brown and fragrant.
Step 7: Once baked, remove the granola from the oven and let it cool completely on the baking sheet. Resist the urge to stir it while hot, as cooling undisturbed is key to forming those coveted clusters.
Step 8: Once completely cool, stir in any optional dried fruits like cranberries or raisins. Break into clusters and transfer to an airtight container. Your delicious homemade granola recipe is ready to enjoy!
Notes
For extra crunch, add a tablespoon of chia seeds or flax seeds to the dry mixture. Adjust sweetener to your taste. For larger clusters, press the mixture down lightly with a spatula before baking and avoid stirring during the first 20 minutes.
