Ingredients
3/4 cup extra virgin olive oil
1/4 cup red wine vinegar
1 tablespoon fresh lemon juice
1 clove garlic, minced
1 teaspoon Dijon mustard
1 teaspoon dried Italian seasoning
1/2 teaspoon onion powder
1/2 teaspoon salt
1/4 teaspoon black pepper
Optional: 1/2 teaspoon honey for balance
Instructions
Step 1: In a medium glass jar or bowl, combine the red wine vinegar, lemon juice, minced garlic, and Dijon mustard.
Step 2: Add the dried Italian seasoning, onion powder, salt, pepper, and honey (if using). Whisk vigorously until the mustard and spices are well integrated.
Step 3: Slowly pour in the extra virgin olive oil while whisking constantly to create an emulsion. Alternatively, if using a jar, tighten the lid and shake vigorously for 30 seconds.
Step 4: Taste the homemade italian dressing and adjust the salt or vinegar levels to your personal preference.
Step 5: Serve immediately over your favorite salad or store in the refrigerator in a sealed container.
Notes
If the oil solidifies in the fridge, simply let the jar sit at room temperature for 5-10 minutes and shake well before using.
