Hearty Homemade Nut Roast

A satisfying vegetarian and vegan-friendly nut roast packed with mixed nuts, vegetables, and aromatic herbs, perfect as a festive centerpiece or comforting family dinner.

2 cups (chopped) mixed nuts (e.g., walnuts, almonds, hazelnuts)
1 cup cooked rice or quinoa
1 cup shredded carrots
1 cup chopped celery
1 medium chopped onion
3 cloves minced garlic
¼ cup (chopped) fresh parsley
2 tablespoons olive oil
2 tablespoons tamari or soy sauce
2 teaspoons ground flaxseed
6 tablespoons water
1 teaspoon dried thyme
1 teaspoon dried rosemary
To taste salt and pepper
½ cup breadcrumbs

Instructions

Step 1: Preheat your oven to 180°C (350°F). This ensures your Nut Roast bakes evenly and achieves a beautiful golden-brown crust.
Step 2: Prepare the flaxseed mixture. In a small bowl, combine the ground flaxseed with 6 tablespoons of water. Stir well and let it sit for 5-10 minutes until it thickens, forming a gel-like consistency. This will act as your binder.
Step 3: Sauté the aromatics. Heat the olive oil in a large skillet over medium heat. Add the chopped onion and minced garlic, sautéing for about 3-4 minutes until softened and fragrant. Stir in the chopped celery and shredded carrots, continuing to cook for another 5 minutes until the vegetables are tender.
Step 4: Mix the ingredients. In a large mixing bowl, combine the chopped mixed nuts, cooked rice or quinoa, sautéed vegetables, fresh parsley, tamari or soy sauce, dried thyme, dried rosemary, and salt and pepper to taste. Pour in the thickened flaxseed mixture and stir everything thoroughly until well combined.
Step 5: Add breadcrumbs. Fold the breadcrumbs into the mixture. The mixture should be moist but firm enough to hold its shape when pressed together. If it feels too dry, add an additional tablespoon of olive oil or water until it reaches the desired consistency.
Step 6: Transfer to a baking dish. Lightly grease a loaf pan or a suitable baking dish with olive oil. Spoon the Nut Roast mixture into the pan, pressing it down very firmly with a spatula or the back of a spoon to ensure it’s compact and will hold its shape during baking. Smooth the top surface.
Step 7: Bake the Nut Roast. Place the loaf pan in the preheated oven and bake for 45 to 50 minutes. The top should be golden brown, and the roast should feel firm to the touch. You can insert a toothpick into the center to check for doneness; it should come out mostly clean.
Step 8: Cool and serve. Once baked, remove the Nut Roast from the oven and let it cool in the pan for 10-15 minutes. This crucial resting period allows it to set, making it much easier to slice. Carefully invert it onto a serving dish, slice thickly, and serve warm with your favorite gravy or side dishes.

Notes

For an even richer flavor, you can add 1 tablespoon of nutritional yeast to the mixture. If you prefer a smoky flavor, a pinch of smoked paprika can also be a wonderful addition. This nut roast freezes exceptionally well; wrap it tightly and reheat from frozen at a slightly lower oven temperature (around 160°C/325°F) for a longer period until thoroughly heated.
