Honey BBQ Chicken and Rice

A quick, sweet, and smoky honey BBQ chicken and rice dish that’s perfect for a flavorful weeknight dinner. Tender chicken coated in a luscious homemade honey BBQ sauce served over fluffy rice.

1 tbsp olive oil
1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
Salt and freshly ground black pepper, to taste
2 cloves garlic, minced
1 cup favorite BBQ sauce
1/4 cup honey
1 tbsp apple cider vinegar
2 tbsp fresh parsley, chopped (for garnish, optional)
3 cups cooked white or brown rice, for serving

Instructions

Step 1: Heat 1 tablespoon of olive oil in a large skillet or non-stick pan over medium-high heat. While the pan is heating, pat your chicken pieces dry with paper towels.
Step 2: Add the chicken pieces to the hot skillet in a single layer. Season generously with salt and black pepper. Cook for 3-4 minutes per side, or until the chicken is lightly browned and cooked through. Remove the chicken from the skillet and set aside.
Step 3: In the same skillet, reduce the heat to medium. Add the minced garlic and sauté for 30 seconds until fragrant.
Step 4: Pour in the BBQ sauce, honey, and apple cider vinegar. Stir well to combine, scraping up any browned bits from the bottom of the pan. Bring the sauce to a gentle simmer.
Step 5: Return the cooked chicken to the skillet, tossing to coat evenly in the honey bbq sauce. Let it simmer for 2-3 minutes, allowing the sauce to thicken slightly and cling beautifully to the chicken.
Step 6: Remove the skillet from the heat. Stir in the chopped fresh parsley, if using.
