Honey-Glazed Balsamic Figs with Creamy Mascarpone

12 fresh figs (Black Mission, Brown Turkey, or Kadota varieties work well)
3 tablespoons honey
2 tablespoons balsamic vinegar
1/2 teaspoon vanilla extract
1/2 cup mascarpone cheese
2 tablespoons chopped pistachios (optional, for garnish)
Fresh mint leaves (optional, for garnish)

Instructions

Step 1: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
Step 2: Gently wash the fresh figs and pat them dry. Remove the small stem from each fig. Cut each fig in half lengthwise and arrange them cut-side up on the prepared baking sheet.
Step 3: In a small bowl, whisk together the honey, balsamic vinegar, and vanilla extract until well combined.
Step 4: Drizzle about two-thirds of the honey-balsamic mixture evenly over the cut sides of the figs. Reserve the remaining glaze for serving.
Step 5: Roast the figs in the preheated oven for 12-15 minutes, or until they are tender, slightly caramelized, and their juices are bubbling. The exact time may vary based on the ripeness and size of your figs.
Step 6: While the figs are roasting, prepare the mascarpone cheese. You can whisk it lightly if desired.
Step 7: Once the figs are done, carefully remove them from the oven. Let them cool slightly for a few minutes.
Step 8: To serve, arrange the warm, honey-glazed balsamic figs on individual plates. Dollop a generous spoonful of mascarpone cheese alongside or on top of the figs.
Step 9: Drizzle the remaining honey-balsamic glaze over the figs and mascarpone. Garnish with chopped pistachios and fresh mint leaves, if using. Serve immediately and enjoy!

Notes

For the best flavor, use ripe, fresh figs. A good quality balsamic vinegar will enhance the glaze. Serve warm for optimal taste.
