Ingredients
1.5 lbs boneless skinless chicken breast, cut into bite-sized pieces
2 cups hard pretzels, crushed into fine/medium crumbs
1/2 cup all-purpose flour
2 large eggs, beaten
1 tsp garlic powder
1/2 tsp black pepper
2 cups cooked quinoa or brown rice
4 cups mixed greens or kale
1/4 cup Dijon mustard
2 tbsp yellow mustard
3 tbsp honey
1 tbsp apple cider vinegar
Instructions
Step 1: Preheat your oven to 400°F (200°C) and set a wire cooling rack over a large baking sheet.
Step 2: In three separate shallow bowls, place the flour mixed with garlic powder and pepper, the beaten eggs, and the crushed pretzels.
Step 3: Dredge each chicken piece in the flour, then dip in the egg wash, and finally coat thoroughly with the pretzel crumbs, pressing firmly to adhere.
Step 4: Place the chicken pieces on the wire rack and bake for 18-20 minutes, or until the chicken is cooked through and the pretzel crust is golden brown.
Step 5: While the chicken bakes, whisk together the Dijon mustard, yellow mustard, honey, and apple cider vinegar in a small bowl until smooth.
Step 6: Assemble the Honey Mustard Pretzel Chicken Bowls by dividing the grains and greens among four bowls, topping with the crispy chicken, and drizzling generously with the honey mustard sauce.
Notes
For the crispiest chicken, ensure the pretzels are not crushed too finely into a powder; keep some small chunks for extra texture.
