Ingredients
1 cup long-grain white rice, rinsed
2 Mexican cinnamon sticks (canela), broken
4 cups warm water (for soaking)
2 cups whole milk (or dairy-free alternative)
1/2 cup granulated sugar (adjust to taste)
1 teaspoon vanilla extract
Ground cinnamon for garnish
Ice cubes for serving
Instructions
Step 1: Rinse the rice under cold water and place it in a large glass container with the broken cinnamon sticks.
Step 2: Add 4 cups of warm water, cover, and let soak at room temperature for 8 to 12 hours.
Step 3: Transfer the rice, cinnamon, and soaking water to a blender and process until completely smooth, about 2-3 minutes.
Step 4: Strain the mixture through a fine-mesh sieve or cheesecloth into a large pitcher to remove all solids.
Step 5: Stir in the milk, sugar, and vanilla extract until the sugar is fully dissolved.
Step 6: Chill thoroughly and serve over ice with a sprinkle of ground cinnamon.
Notes
For the smoothest texture, use a nut milk bag for straining. You can also substitute sugar with condensed milk for extra richness.
