Classic Kentucky Hot Brown

Ingredients

4 slices thick-cut Texas toast
1 lb roasted turkey breast, thick-sliced
4 slices bacon, cooked until crispy
1 large tomato, sliced
4 tbsp unsalted butter
4 tbsp all-purpose flour
2 cups heavy cream
1/2 cup Pecorino Romano cheese, grated
1/4 cup Parmesan cheese, grated
1/2 tsp salt
1/4 tsp black pepper
Pinch of nutmeg
Fresh parsley for garnish
Paprika for dusting

Instructions

Step 1: Preheat your oven’s broiler to high and prepare a rimmed baking sheet or two individual oven-safe dishes.
Step 2: In a medium saucepan over medium heat, melt the butter. Whisk in the flour and cook for 2 minutes to create a light roux, ensuring it doesn’t brown.
Step 3: Slowly whisk in the heavy cream. Continue whisking and simmering until the sauce thickens enough to coat the back of a spoon.
Step 4: Remove the sauce from heat and stir in the Pecorino Romano and Parmesan cheeses until melted and smooth. Season with salt, pepper, and a pinch of nutmeg.
Step 5: Place two slices of toasted bread in each dish. Top each slice with a generous portion of sliced turkey breast.
Step 6: Pour the Mornay sauce over the turkey and bread, covering them completely. Sprinkle with a little extra cheese and a dash of paprika.
Step 7: Place under the broiler for 3-5 minutes, or until the sauce is bubbling and golden brown. Remove and garnish each dish with two slices of bacon, two tomato slices, and fresh parsley.

Notes

Ensure the bread is toasted very well to prevent it from becoming too soft under the heavy sauce.
