Ingredients
12 oz linguine or fettuccine pasta
1 lb imitation crab (flakes or chunks)
4 cloves garlic, minced
1/4 cup unsalted butter
1 cup heavy cream
1/2 cup grated Parmesan cheese
1/2 tsp red pepper flakes (optional)
Salt and black pepper to taste
2 tbsp fresh parsley, chopped
Lemon wedges for serving
Instructions
Step 1: Bring a large pot of salted water to a boil and cook the pasta according to package directions until al dente.
Step 2: While the pasta cooks, melt the butter in a large skillet over medium heat. Add the minced garlic and red pepper flakes, sautéing for about 1-2 minutes until fragrant but not browned.
Step 3: Pour the heavy cream into the skillet and bring to a gentle simmer. Let it cook for 3-5 minutes until it begins to thicken slightly.
Step 4: Add the imitation crab to the cream sauce and stir gently. Cook for 2-3 minutes just to heat the crab through.
Step 5: Drain the pasta, reserving about 1/2 cup of the pasta water. Toss the pasta into the skillet with the sauce and crab.
Step 6: Stir in the Parmesan cheese and parsley. If the sauce is too thick, add a tablespoon or two of the reserved pasta water. Season with salt and pepper to taste.
Step 7: Serve immediately with a squeeze of fresh lemon juice.
Notes
Ensure you don’t overcook the imitation crab, as it is already pre-cooked and only needs to be warmed through.
