Ingredients
10–12 medium fresh jalapeños, stems removed
3 cloves garlic, peeled
1/4 cup white onion, chopped
1/2 cup distilled white vinegar
1/2 cup water
1 teaspoon sea salt
1/2 teaspoon honey (optional, to balance acidity)
1 tablespoon lime juice
Instructions
Step 1: Wash the jalapeños thoroughly and remove the green stems. For a milder sauce, slice the peppers in half and scrape out the seeds and white membranes.
Step 2: In a small saucepan, combine the jalapeños, garlic, onion, water, vinegar, and salt.
Step 3: Bring the mixture to a simmer over medium heat. Reduce the heat and let it cook for about 8 to 10 minutes, or until the peppers are tender and the garlic is soft.
Step 4: Carefully pour the mixture into a high-powered blender. Add the lime juice and honey (if using).
Step 5: Blend on high speed until the sauce is completely smooth and emulsified. Be careful of the steam when opening the blender lid.
Step 6: Taste and adjust seasoning if necessary. If the sauce is too thick, add a splash more water or vinegar.
Step 7: Transfer the sauce to a clean glass jar or bottle and allow it to cool to room temperature before refrigerating.
Notes
Store in the refrigerator for up to 3 weeks. Shake well before using as natural separation may occur.
