1 cup creamy peanut butter
1 cup granulated sugar
1 cup brown sugar, packed

Instructions
Step 1: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
Step 2: In a large mixing bowl, combine the creamy peanut butter, 1 cup granulated sugar, and brown sugar. Mix until smooth and creamy.
Step 3: Beat in the eggs one at a time, followed by the vanilla extract, mixing until well combined.
Step 4: In a separate bowl, whisk together the baking soda, salt, and all-purpose flour.
Step 5: Gradually add the dry mixture to the wet ingredients, stirring until just combined. Be careful not to overmix.
Step 6: Using a tablespoon or cookie scoop, portion out the dough and roll it into balls. If desired, roll the balls in additional granulated sugar for added sweetness and texture.
Step 7: Arrange the cookie dough balls on the prepared baking sheet, leaving space between each one.
Step 8: Using a fork, gently press down on each cookie ball to flatten it and create a crisscross pattern on top.
Step 9: Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden. The centers may look slightly underbaked, but they will firm up as they cool.
Step 10: Allow the cookies to cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.
Notes
For an extra touch, consider adding chocolate chips or chopped peanuts to the dough for added flavor and texture. If your dough is too sticky, chill it for 15-30 minutes before rolling.
