Ingredients
2 packs instant ramen noodles (discard seasoning packets)
1 tbsp sesame oil
2 cloves garlic, minced
1 inch ginger, grated
2 green onions, sliced (whites and greens separated)
1 cup kimchi, chopped (plus 1–2 tbsp kimchi juice)
4 cups chicken or vegetable broth
2 tbsp soy sauce
1 tbsp gochujang (Korean chili paste, optional, for extra spice)
1 tsp sugar (to balance flavors)
2 large eggs, soft-boiled and halved
Optional toppings: sliced roasted chicken, pan-fried tofu, nori (seaweed) sheets, sesame seeds, chili oil, corn, fresh spinach
Instructions
Step 1: Prepare your ingredients: mince garlic, grate ginger, slice green onions (keeping whites and greens separate), and chop kimchi.
Step 2: In a medium pot or saucepan, heat sesame oil over medium heat. Add minced garlic and grated ginger and sauté for about 30 seconds until fragrant, taking care not to burn them.
Step 3: Add the white parts of the green onions and the chopped kimchi (along with 1-2 tablespoons of its juice) to the pot. Sauté for 2-3 minutes, allowing the kimchi to warm through and release its flavors.
Step 4: Pour in the chicken or vegetable broth. Stir in the soy sauce, gochujang (if using), and sugar. Bring the broth to a gentle simmer, then reduce heat to low and let it steep for 5-7 minutes to allow the flavors to meld beautifully.
Step 5: While the broth simmers, cook your ramen noodles according to package instructions in a separate pot of boiling water, typically 2-3 minutes. Drain well and set aside.
Step 6: If desired, soft-boil eggs separately for 6-7 minutes for a jammy yolk. Peel and slice them in half. Any other protein like chicken or tofu can be quickly cooked at this stage.
Step 7: To assemble, divide the cooked ramen noodles evenly into two serving bowls. Ladle the hot kimchi broth over the noodles.
Step 8: Arrange your desired toppings over the noodles and broth. This includes the green parts of the green onions, halved soft-boiled eggs, and any other optional toppings like chicken, nori, or sesame seeds.
Step 9: Serve your flavorful kimchi ramen immediately and enjoy!
Notes
For best results, use good quality kimchi and broth. Adjust the amount of gochujang and kimchi juice to your preferred level of spice and tanginess. For a creamier broth, stir in a tablespoon of butter or a splash of milk at the end.
